Pineapple-mint Smoothie

#loveyourleftovers with this refreshingly tropical smoothie, which has a perfect citrus tang to balance out the pineapple sweetness.

Ingredients

1 cup diced pineapple
½ frozen banana
2 tablespoons yoghurt
2 tablespoons soaked, natural cashew nuts (soak overnight in water then drain)
2 tablespoons chopped mint leaves
Zest and juice of ½ lemon
¼ teaspoon honey
¾ cup water
4 ice cubes

Place all ingredients in a blender or smoothie maker and blend until smooth. To serve, pour smoothie into a glass and enjoy immediately.
